Ingredients:
– 500g carrots, peeled and finely grated
– 2 cups milk
– 1/2 cup sugar (to taste)
– 4 tablespoons ghee (clarified butter)
– 1/4 cup ground almonds
– 1/4 cup raisins (optional)
– 1 teaspoon ground cardamom
– Chopped nuts for garnish (e.g., almonds, cashews, pistachios)
Instructions:
1. Heat the ghee in a large pot. Add the finely grated carrots and cook over medium heat, stirring constantly, until they are soft and their volume is reduced. This takes about 15-20 minutes.
2. Add the milk and stir well. Reduce the heat and simmer the carrots, stirring occasionally, until the milk is largely evaporated and a thick consistency forms. This takes about 30-40 minutes.
3. Add the sugar, ground almonds, raisins (if using), and ground cardamom. Stir well and simmer for another 10-15 minutes, until the sugar is completely dissolved and the Gajar Halwa has reached a thick consistency.
4. Remove the Gajar Halwa from the heat and transfer it to a serving bowl.
5. Sprinkle chopped nuts on top and serve the Gajar Halwa warm.
