GULAB JAMUN WITH CREMEY PISTACHIO

GULAB JAMUNWITH CREMEY PISTACHIO

Ingredients for Gulab Jamun:

– 200g milk powder
– 100g flour
– 1/4 teaspoon baking powder
– 2 tablespoons ghee (clarified butter)
– 1/2 cup milk (approximately)
– Oil for frying

Ingredients for the sugar syrup:

– 2 cups sugar
– 2 cups water
– 4-5 cardamom pods, crushed
– A few drops of rose water (optional)

Ingredients for the pistachio cream:

– 1 cup shelled pistachios
– 1 cup milk
– 1/4 cup sugar
– 1 teaspoon rose water (optional)

Instructions:

1. First, prepare the dough for the Gulab Jamun. In a bowl, mix the milk powder, flour, and baking powder.

Add the ghee and rub it into the dry ingredients with your fingertips until the mixture becomes crumbly.

2. Gradually add milk and knead into a soft dough. Cover the dough with a clean kitchen towel and let it rest for 20-30 minutes.

3. In the meantime, prepare the sugar syrup by mixing sugar, water, and crushed cardamom pods in a saucepan. Bring it to a boil and let it simmer over medium heat until the sugar completely dissolves and the syrup slightly thickens. Optionally, add a few drops of rose water if desired, then remove the pot from the heat.

4. For the pistachio cream, place the shelled pistachios and milk in a blender and process into a smooth paste. In a saucepan, mix the pistachio paste and sugar, and cook over medium heat until the sugar dissolves and the mixture slightly thickens. Add rose water if desired and stir well. Set the pistachio cream aside to cool.

5. After the dough has rested, shape it into small balls, making sure there are no cracks. Heat the oil in a pan over medium heat and fry the Gulab Jamun in batches until golden brown. Carefully place them into the prepared sugar syrup and let them soak for about 2 hours.

6. Remove the Gulab Jamun from the sugar syrup and arrange them on a serving plate. Pour some of the remaining sugar syrup over the Gulab Jamun and serve them warm or at room temperature.

7. To serve the Gulab Jamun with pistachio cream, place each Gulab Jamun on a plate and spoon some pistachio cream over it. You can also sprinkle chopped pistachios on top for garnish.
