– 1 cup (200 g) Arborio rice or short-grain rice
– 4 cups (1 liter) milk
– 1/2 cup (100 g) sugar
– 1 teaspoon vanilla extract or 1 vanilla bean (split)
– A pinch of salt
– Cinnamon for sprinkling (optional)
– Fruits or nuts for garnish (optional)
**Instructions:**
1. Rinse the rice thoroughly under running water until the water runs clear.
2. In a pot, bring the milk to a boil. Add the rinsed rice, sugar, vanilla extract or split vanilla bean, and a pinch of salt. Stir well.
3. Reduce the heat to medium-low and let the rice simmer, stirring occasionally, until it is tender and the mixture becomes thick and creamy. This usually takes about 25-30 minutes.
4. Remove the pot from the heat and let the rice pudding sit for a few minutes to cool slightly and set.
5. Before serving, divide the rice pudding into bowls or glasses and sprinkle with cinnamon or garnish with fruits or nuts if desired.
6. Serve the rice pudding warm or chilled and enjoy!
