CHICKEN BIRYANI WITH RAITA

**Ingredients for Chicken Biryani:**
– 500g Basmati rice
– 500g chicken breast, cut into cubes
– 2 onions, finely chopped
– 3 garlic cloves, chopped
– 1 piece of ginger (about 2 cm), finely chopped
– 2 green chilies, finely chopped
– 4 tomatoes, chopped
– 1 cup yogurt
– 1/2 cup fresh coriander leaves, chopped
– 1/2 cup fresh mint leaves, chopped
– 1 teaspoon turmeric powder
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1 teaspoon garam masala
– 4 cloves
– 4 cardamom pods
– 2 bay leaves
– Salt to taste
– Vegetable oil or ghee for frying
– Water for cooking

**Ingredients for Raita:**
– 1 cup yogurt
– 1/2 cucumber, peeled and finely chopped
– 1 small tomato, finely chopped
– 1/4 cup fresh coriander leaves, chopped
– 1/4 teaspoon ground cumin
– Salt to taste

**Instructions:**

1. Wash the basmati rice thoroughly and soak it in cold water while you prepare the other ingredients.

2. In a large pot, heat some oil or ghee. Add the chopped onions and sauté until golden brown.

3. Add the chopped garlic, ginger, and green chilies. Continue to sauté until fragrant.

4. Add the chicken cubes and brown them slightly.

5. Add the chopped tomatoes and stir well. Let it simmer for about 5 minutes until the tomatoes are soft.

6. Add the yogurt and chopped fresh herbs (coriander and mint). Also, add the spices (turmeric, ground cumin, ground coriander, garam masala) and mix well. Add salt to taste if needed.

7. Drain the soaked rice and gently add it to the pot. Stir carefully to ensure the rice is evenly coated with the chicken mixture.

8. Add enough water to cover the rice by about a finger’s width. Add the cloves, cardamom pods, and bay leaves. Bring the rice to a boil, then reduce the heat, cover, and let it simmer on low heat until the rice is cooked and the water is absorbed.

9. While the rice is cooking, prepare the Raita. In a bowl, combine the yogurt, chopped cucumber, tomato, coriander leaves, ground cumin, and salt. Mix well and refrigerate until ready to serve.

10. Once the rice is cooked, remove the pot from the heat and let the Biryani rest for about 5 minutes to allow the flavors to meld.
